BAKED CAULIFLOWER

THIS MEAL IS FOR LUNCHES & DINNERS
Prep Time: 10 mins | Cooking Time: 30 mins | Serves: 4 people | Difficulty: Easy

- Preheat oven to 200 degrees C
- Cut the greens off a small to medium sized cauliflower and place in a microwavable bowl with 1/4 cup of water and cover with glad wrap. Cook on high for 12-15 minutes.
- While the cauli is steaming, in a small bowl add 50g light sour cream, 25g tahini, 20g full fat mayo, 30mls or cream and 1.5tsp of lemon juice. Season with a pinch of salt and pepper and stir until smooth
- Finely chop spring onions and set aside the top 1/4 for garnish.
- Remove the cauli from the oven and cover with the sauce, opening the florets to get inside the cauli too, then top with the beef mince and dukkah and then place back in the oven for five minutes
- While the cauli cooks in the oven, in a hot pan, add 1/2 teaspoon of olive oil, the bottom 3/4 of the spring onions and the beef mince OR Quorn Vegetarian mince. Cook until all liquid has evaporated then season with a pinch of salt and pepper and a splash of Worcestershire sauce. Remove from heat
- Remove, cut in half and serve
