BEEF STUFFED EGGPLANT

COOKING INSTRUCTIONS

  1. Cut a medium sized egg plant into halves, length ways and scoop out the flesh and set aside. Cover the eggplant shell with olive oil, season with salt and place in an oven preheated to 180/360 degrees
  2. In a hot pan, add one teaspoon of oil, beef mince, finely sliced button mushrooms, egg plant flesh and diced onion and cook on a high heat until beef browns
  3. Season with salt, pepper, garlic powder, beef stock, stir through finely chopped spring onions and remove once beef is coated
  4. Remove the egg plant shells from the oven and fill with beef and sprinkle with cheese. Place back in the oven until cheese melts
  5. Top with sour cream and serve
