CARAMEL NUT CHEESECAKE

THIS MEAL IS FOR DESSERT
Prep Time: 5 mins | | Serves: 10 people | Difficulty: Easy

- In a blender, add cream cheese, cream, eggs, lemon juice, 30g stevia and vanilla extract and blend until smooth
- In a small pan, add 100g butter and on a medium heat, bring to boil then simmer until it starts to turn brown. Add stevia and cook until dissolved and the butter browns further. Add cream and keep stirring whilst cooking for a further few minutes until the caramel sauce reduces and thickens. Should be thick but still able to pour
- In a 20cm round flan tray, add half the cheesecake mix and spread evenly. Crush nuts and sprinkle half over the surface and drizzle caramel sauce over
- Place in the freezer for five minutes, remove and repeat then freeze until ready for serving
- TIP: You might want to freeze for 2hrs then cut into pieces then refreeze. Take one piece out of the freezer when ready to eat and let thaw for 10 minutes before eating
