MEXICAN BEEF MINCE

COOKING INSTRUCTIONS

  1. In a hot fry pan, melt butter and add red onion and zucchini and cook for two minutes
  2. Add beef mince and brown. Add cumin, garlic powder, paprika, stock cube and salt and pepper. Cayenne pepper is optional if you would like a bit of kick!
  3. Keep stirring for three minutes, then add bell pepper and chopped coriander. Cook for a further two minutes and remove to a bowl.
  4. Top with cheese and serve
