MEXICAN BEEF MINCE

THIS MEAL IS FOR LUNCHES & DINNERS
Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 1 people | Difficulty: Easy

- In a hot fry pan, melt butter and add red onion and zucchini and cook for two minutes
- Add beef mince and brown. Add cumin, garlic powder, paprika, stock cube and salt and pepper. Cayenne pepper is optional if you would like a bit of kick!
- Keep stirring for three minutes, then add bell pepper and chopped coriander. Cook for a further two minutes and remove to a bowl.
- Top with cheese and serve
