SCRAMBLED EGG ON BACON AND MUSHROOM

THIS MEAL IS FOR BREAKFAST
Prep Time: 5 mins | Cooking Time: 5 mins | Serves: 1 people | Difficulty: Easy

- Finely slice bacon and mushroom and add to a hot pan with one teaspoon of butter and cook until bacon crisps.
- Season with a pinch of salt and a splash of Worcestershire sauce, cook for a further minute then remove
- Crack three eggs and gently mix (Not whisk) until egg yolk marbles. Season with salt and add two teaspoons of butter (two knobs)
- In the same frying pan as you cooked the bacon, wipe with a paper towel and line with spray oil. Pour in egg and on a low heat, constantly stir until butter melts and egg starts to harden, but not set. Remove before the egg sets. Should be silky, not hard
- Plate bacon and mushroom and place egg on top
- Optional: Scatter with water cress and cracked pepper
