SEAFOOD ZUCCHINI CARBONARA

THIS MEAL IS FOR LUNCHES & DINNERS
Prep Time: 10 mins | Cooking Time: 15 mins | Serves: 1 people | Difficulty: Moderate

- Spiralize 150g zucchini and place in a hot frying pan with two teaspoons of butter and fry off for three minutes and remove
- In the same pan, add another two teaspoons of butter and add seafood and two baby carrots (Optional). Season with salt and cook on a high heat for four minutes.
- In a small bowl, add 1/3 cup of cream and one egg yolk. Season with salt and pepper and 1/4 teaspoon of garlic powder and whisk through
- Remove the baby carrots and then add cream sauce and roughly chopped coriander
- Add back the zucchini and stir through and cook for two minutes until the sauce thickens
- Plate and top with baby carrots
