SEAFOOD ZUCCHINI CARBONARA

COOKING INSTRUCTIONS

  1. Spiralize 150g zucchini and place in a hot frying pan with two teaspoons of butter and fry off for three minutes and remove
  2. In the same pan, add another two teaspoons of butter and add seafood and two baby carrots (Optional). Season with salt and cook on a high heat for four minutes.
  3. In a small bowl, add 1/3 cup of cream and one egg yolk. Season with salt and pepper and 1/4 teaspoon of garlic powder and whisk through
  4. Remove the baby carrots and then add cream sauce and roughly chopped coriander
  5. Add back the zucchini and stir through and cook for two minutes until the sauce thickens
  6. Plate and top with baby carrots
