SIMPLE SALMON SCRAMBLE WITH PARMESAN AND CHIVES

- Crack three eggs in a small bowl and season with salt and pepper. Add cream and whisk until combined
- Roughly chop smoked salmon and add to the egg mix with finely chopped chives and a Tablespoon of grated parmesan
- In a hot frying pan, add one teaspoon of butter and coat the surface. Pour in egg and keep stirring until the eggs firm up but do not go rubbery.
- Remove and serve with a dollop of sour cream
