ZUCCHINI FRITTERS

THIS MEAL IS FOR BREAKFAST
Prep Time: 5 mins | Cooking Time: 10 mins | Serves: 1 people | Difficulty: Easy

- Grate 200g zucchini into a bowl and squeeze out as much water as possible
- Season with salt, pepper, garlic powder, cumin, finely grated mozzarella cheese and add egg and stir through
- In a hot pan, add two teaspoons of oil and spoon in the zucchini mix into three equal fritters and cook for around 3-4 minutes either side until golden and cooked through
- Plate with scattered salad leaf and top with sour cream

- 2 teaspoons
- Sour Cream - Light
- 1 Tbs
