ZUCCHINI FRITTERS

COOKING INSTRUCTIONS

  1. Grate 200g zucchini into a bowl and squeeze out as much water as possible
  2. Season with salt, pepper, garlic powder, cumin, finely grated mozzarella cheese and add egg and stir through
  3. In a hot pan, add two teaspoons of oil and spoon in the zucchini mix into three equal fritters and cook for around 3-4 minutes either side until golden and cooked through
  4. Plate with scattered salad leaf and top with sour cream
